I am searching for a source for a good ceiling mounted exhaust hood. I
want to put it in our oven/plaster room. My goal is to eliminate fumes and
fine particulates. Any information will be appreciated.

It should be a very simple item to have manufactured in place at your
facility to a custom fit. Just call an air conditioning installer locally to
you. It's just some sheet metal cut to fit. To buy a pre-made unit will
probably not fit as you need and will be a pain in the a** to find, anyway.
He should also be able to install an off the shelf air handler easily.

We had ours custom made by a local heating and A/C company

My husband is an engineer ...HVAC...check with a company called GreenHeck
or a Ferguson or Hughes Supply company in your area for the distributor
in your area you need to have the room size and cfm specs ready..Good
Luck... he also designed the lamination room for Rehab Inst of Chicago you
may be able to contact RIC in Chicago..maybe they will have the specs on a
blueprint...Good Luck

do some research on this matter. You may end up extracting all the heated
air without removing the fumes. We have a small hood directly above the oven
door.
Most fumes produced in our industry are heavier than air and need to be
extracted lower rather than higher. Ventilation companies are experienced
with restaurants where steam and odors are being taken away. Dry cleaners
have systems to take away solvent odors and may be a good resource.
Particulates are best taken away at the source.
