Thanks to all of the input and advice that was given. Within the responses, several people asked me to post replies. As there were also 2 ovens that our colleagues were looking to sell, I thought it helpful to share that as well. Jack at Fillauer can give you particulars on new O&P specific ovens. I apologize for the re-posting format. For prosthetic use, I decided on modifying and using a Duke E101-E per a practitioner's recommendation. (Thanks Ron).

Kip,
Do yourself a favor and look at commercial Duke convection ovens. They are new and will cost $2000. Any restaurant supply house can work on them. I've had mine for 6 years with zero problems. Doing anything beyond a 27 x 22 piece of material will require a double pull. Good luck.
