I would take a look at the V2P prehensor from Toughware Prosthetics. It is made from a composite injection molded plastic, so salt water wouldn't be an issue. Also, the pads on the hooks are replaceable. You could potentially replace the pads with a material that would be less slippery on fish. Maybe potentially adhering some fishing glove material to the pads. Just an idea. The website is www.toughwareprx.com.

Has anyone had experience with using a voluntary opening split hook for
a fisherman (a proper fisherman with a boat, nets and lots of fish!). He
needs to hold the fish with the hook while gutting with his sound hand
and later hold a gutting knife in the hook. He tried it with a model 5
Hosmer hook but found the rubber surfaces too slippery to hold the fish.
It also needs to be resistant to salt water and durable. Any
